Typically available during the colder autumn and winter months, we have delighted in many a dish of steaming fresh egg papardelle with a riotously rich tomato sauce.

It's one of the dishes of our childhood, and one that we have passed on to our own children with great success.

Ingredients for 4 servings

- Fresh Tomato sauce

  • Tomato, 800 grams
  • Garlic Cloves, 2
  • Basil (Leaves), 8
  • Extra-virgin olive oil, as needed
  • Salt, as needed
     

- Pappardelle Ingredients

  • Egg (Medium Yellow) 4
  • Semola Flour 400 gr
