Risotto with Casera Cheese and Ham Petals paired with Berlucchi | 15 Minute Recipe


A handful of minutes is all you need for this creamy and cheesy risotto with thin prosciutto slices.

Risotto, as you know by now, is one of our favourite dishes, but sometimes it is a bit time-consuming to prepare.

Today, for the Dinner in 15 column, Chef Sara Lai is proposing a risotto that, by carefully following her tricks, can be ready in about twenty minutes. 

Of course, the cooking time depends on the type of rice you buy, but following Sara's advice will certainly reduce the time. 

Today's risotto is cooked together with Casera, a typical Valtellina cheese, and presented with finely chopped raw ham petals, 
and accompanied by a bottle of rosé bubbles.

Mamablip's wine expert, Filippo Bartolotta, uncorks a bottle of Berlucchi '61 Rosé Franciacorta DOCG, the perfect accompaniment to this first course.

Ingredients for 4 servings
160 gr, carnaroli rice
480 gr, water
200 gr, Casera cheese from Valtellina
50 gr, butter
160 gr, raw ham
pepper and salt
